The acquisition of fresh fish is divided over different mediums, varying from Belgian, Dutch and French fish auctions to the direct purchase in Norway, Iceland, etc. This allows us to always provide the best disposable fish from the moment of its purchase, resulting in a high-end quality product.
Our own rugged fishing blokes fillet on a daily basis and have been working in the fish industry since time immemorial.
North Sea fish
All our fish from the North Sea is purchased through several fish auctions. Our main supply comes from Belgian and Dutch auctions. Recently we have added an auction in Boulogne as one of our suppliers. When purchasing our products, we focus on the quality of the fish and on the needs of our customers.
The purchased fish is immediately prepared for sale and is carried out on a daily basis, this ensures we deliver our customers a product with an optimal expiration.
Norwegian & Icelandic fish
On a day to day basis, we have Norse and Icelandic fish coming in. This is a perfect and qualitative addition to our North Sea fish. The spreading of the purchase through different suppliers is again a key factor in our process.
- Salmon
The fresh salmon is always directly imported from Norway and Scotland. Our experienced fishmongers are no strangers when it comes to filleting fish and are familiar with the needs of our customers, resulting in a perfectly cut piece of salmon.
- Cod
Before the cutting of our fillets we select the largest and most qualitative codfish as possible.
Tuna
During our import process we keep emphasizing on good price/quality ratio. Moreover, we only select middle pieces of the tuna, so that you will never have to fear an excess of tendons.
